Visit to the Aquarium of The Pacific




I spent the afternoon yesterday at the Aquarium of the Pacific. It wasn't too crowded so I had plenty of time to plan my shots. I even found time to buy a $3.00 Diet Pepsi.

Lunch with a Friend

Lunched with G in San Clemente today. He had a fishless taco, and I had a chicken enchilada. After lunch G said he'd like me to take a picture of him _without_ his hat. With my camera always at the ready I obliged. Thanks for the lunch, G!

Show Low Enchiladas

Enchilada Recipe courtesy of Uncle Bill c2006

Put on Plate and Enjoy!
Canned Refried Frijoles are optional.

Upon Removal from Oven, Cheese should be Melted

Spread Cheese and Sauce Over Enchiladas
Cook for 40 Minutes @ 325 deg. Seems to work best
when covered with REYNOLDS aluminum foil.

Line Up Filled Enchiladas in Pan

Scoop Filling into Tortillas and
Wrap into tube shaped morsels.

Combine Onions, Olives, Chilis, and Cheese to Make Filling.
Mix the Filling in a Bowl
